Pineapple and Coconut (Pina Colada) Sorbet
- 1 can (440g) pineapple pieces (or frozen pineapple pieces)
- ½ cup (120g) coconut cream
- Optional: A few mint leaves and 2 tablespoons desiccated fine coconut
- Put the can of pineapple and the cup of coconut cream in the freezer for about 4- 6 hours
- Using a can opener, open the can and take all the frozen pineapple out and put in in a high speed blender or food processor (may need to open both ends of the can and push the pineapple out)
- Blend it until the pineapple is completely broken down
- Combine the coconut cream to the pineapple and blend it all until the mixture has a nice creamy sorbet consistency
- Serve immediately with a couple of mint leaves on the top
- Optional: sprinkle some desiccated fine coconut pulp on top
