5 Minutes Sandwich Maker Low FODMAP Pizza (Gluten Free)

A lot of workplaces have replaced the usual toasters with sandwich makers (or sandwich press), this is a tasty and super quick recipe for you to have for lunch. This is a recipe for one, adjust the amount for more servings.

Ingredients
  • 1 low FODMAP tortilla bread (corn tortillas are usually ok)
  • 1 medium carrot, shredded
  • 8 kalamata olives
  • handful spinach
  • ⅓ cup shredded cheese (cheddar, mozzarella or any other cheese that melts)
  • pinch dried oregano
  • drizzle of chilli infused oil
Instructions
  1. Switch on your sandwich maker
  2. Put your tortilla bread on the open sandwich maker, (do not close the sandwich maker, leave it open) just to get one side warm, for about 1 minute
  3. Turn the tortilla on the other side and put the shredded carrots, baby spinach, olives and shredded cheese
  4. Adjust the height setting of the sandwich maker to stay open enough not to touch the pizza toppings, in this way the cheese will melt, the other toppings will slightly cook
  5. Check after a couple of minutes, once the cheese is melted, the tortilla pizza is ready
  6. Sprinkle the oregano all over the top
  7. Drizzle a small amount of chilli infused oil all over (optional if you like it a bit spicy)
  8. Enjoy it!
