Melted Cheese and Baby Spinach Gnocchi

Ingredients
  • 6 cups (2 packets - 1 kg) gluten free gnocchi
  • ¼ cup (60 ml) lactose-free milk or lactose free cream
  • 1 and ¼ cup (150g) chopped mild cheese (I have used a combination of medium cheddar, gorgonzola and cream cheese)
  • 4 packed cups (120g) baby spinach
  • ½ cup (50g) freshly grated parmesan cheese
Instructions
  1. Cook the gnocchi (for this recipe I have used store bought gluten free gnocchi) in a large pan of salted boiling water and follow the instruction on the packet
  2. Heat the lactose free milk or cream in a medium saucepan
  3. Cut the cheese in small pieces and add it to the milk/cream
  4. Stir until smooth and creamy
  5. Add the baby spinach and keep on stirring until the spinach become wilted
  6. Drain the gnocchi and put them back in the pan
  7. Pour cheese sauce over the gnocchi and stir until all the sauce has coated the gnocchi
  8. Serve immediately sprinkled with grated parmesan cheese
