Melted Cheese and Baby Spinach Gnocchi

Ingredients
- 6 cups (2 packets - 1 kg) gluten free gnocchi
- ¼ cup (60 ml) lactose-free milk or lactose free cream
- 1 and ¼ cup (150g) chopped mild cheese (I have used a combination of medium cheddar, gorgonzola and cream cheese)
- 4 packed cups (120g) baby spinach
- ½ cup (50g) freshly grated parmesan cheese
Instructions
- Cook the gnocchi (for this recipe I have used store bought gluten free gnocchi) in a large pan of salted boiling water and follow the instruction on the packet
- Heat the lactose free milk or cream in a medium saucepan
- Cut the cheese in small pieces and add it to the milk/cream
- Stir until smooth and creamy
- Add the baby spinach and keep on stirring until the spinach become wilted
- Drain the gnocchi and put them back in the pan
- Pour cheese sauce over the gnocchi and stir until all the sauce has coated the gnocchi
- Serve immediately sprinkled with grated parmesan cheese
