Pineapple and Coconut (Pina Colada) Sorbet
Recipe type: Dessert
  • 1 can (440g) pineapple pieces (or frozen pineapple pieces)
  • ½ cup (120g) coconut cream
  • Optional: A few mint leaves and 2 tablespoons desiccated fine coconut
  1. Put the can of pineapple and the cup of coconut cream in the freezer for about 4- 6 hours
  2. Using a can opener, open the can and take all the frozen pineapple out and put in in a high speed blender or food processor (may need to open both ends of the can and push the pineapple out)
  3. Blend it until the pineapple is completely broken down
  4. Combine the coconut cream to the pineapple and blend it all until the mixture has a nice creamy sorbet consistency
  5. Serve immediately with a couple of mint leaves on the top
  6. Optional: sprinkle some desiccated fine coconut pulp on top
