These delicious low FODMAP Gingerbread Men Cookies will give you a lot of fun time with your family!

Ingredients
  • 2 cups (240 g) gluten free low FODMAP baking flour plus a bit more to dust
  • 1 cup (100 g) almond meal
  • 1 teaspoon mixed spices (cinnamon, nutmeg, allspice)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup (60 g) butter at room temperature
  • ½ cup (100 g) brown sugar
  • ¼ cup (80 g) maple syrup
  • Decorations: I have used ready made squeezable icing, but you can prepare your own icing. Chocolate buttons, 100's of 1000's. Make sure you can tolerate the ingredients contained in the decorations you are going to use.
Instructions
  1. Preheat the oven to 180C or 350F
  2. Soften the butter in advance by keeping it on the kitchen bench at room temperature or if in a hurry put the butter in a heatproof bowl and place it in a larger bowl that contains hot water, the small quantity of butter should be soft enough in a few minutes
  3. Mix the butter and brown sugar in a large bowl.
  4. Add the egg and maple syrup and mix until well combined.
  5. Add the dry ingredients: gluten-free flour, almond meal, mixed spices, cinnamon, ground ginger, baking powder and salt.
  6. Mix well until it becomes a firm dough, if it's too firm you can always add a couple of tablespoon of water or low FODMAP milk.
  7. Knead the dough until you can form a ball (it will be a bit sticky).
  8. Place the dough between two sheets of baking paper and flatten the dough with your hands.
  9. Roll out the dough approximately ½ cm thick.
  10. Cut out your shapes using a gingerbread man cutter.
  11. Form a new dough ball with the left-over cuts and re-roll until all the dough has been used.
  12. Place the gingerbread men on a baking sheet, on a tray, leaving some space in between each men.
  13. Bake in the pre-heated oven for 11-12 minutes, until the men are firm, but not hard (even if the men are still soft when you take them out, they will harden when they cool down).
  14. Repeat the process with the remaining dough.
  15. Start decorating once the gingerbread men have cooled down completely.
Notes
Check the ingredients in the gluten free flour, to make sure they are low FODMAP.
